INGREDIENTS

to season the chicken

1 lb Lean Chicken Breast 500gm or 17Oz
1 tsp Dried Basil
1 tsp Red Pepper Flakes
1 tsp Garlic Powder
Salt & Pepper
1 tsp Olive Oil
1 tsp Smoked Paprika
1 cup Spinach 40gm or 1.4oz
1 cup Cherry Tomatoes 100gm or 9Oz

for the sauce

½ cup Low Fat Milk 350ml or 11.8oz
1 tbsp Low Fat Cream Cheese
½ cup Reduced Fat Parmesan Cheese 44gm or 1.5oz
1 tbsp Tomato Paste
fresh basil to garnish
INSTRUCTIONS
Chop the Chicken Breast into bite-sized chunks
Season the Chicken Breast with Garlic Powder, Smoked Paprika, Dried Basil, Red Pepper Flakes, Olive Oil, Salt, and Pepper.
Add the chicken to a skillet and cover cook over low heat for 4-5 min.
Add low-fat milk, low-fat cream cheese, reduced-fat parmesan cheese and tomato paste to the blender. Blend to make a smooth and creamy sauce.
Pour the sauce over the cooked chicken. Cover and cook over low heat for 4 more minutes.
Once the chicken gets cooked, serve this creamy Tuscan Chicken. Garnish with some freshly chopped Basil and enjoy with cooked rice or pasta.

Notes: you can use any low fat brand of cream cheese and Parmesan for the recipe. I use Puck’s
