We need 3 cups of all purpose flour or Maida, 1/4 tsp yeast, 1 tsp salt, 1/2 tbsp lemon zest and 1/2 tbsp chopped sage leaves (optional).
Mix all the ingredients together. Add 1.5 to 2 cups of warm water to the flour mix. Mix well, no need of kneading.
Shape the dough as shown, cover it and keep it for 3 to 4 hours in a warm place to ferment. After 3.5 hours, take the dough and dust it with a little flour. Shape the dough and put it in a parchment paper, cover and let it sit for another 30 minutes. Preheat the oven to 450 degreeFahrenheit, about232 degree Celsius. Keep a pizza stone in the oven before you start preheating. The hot pizza stone will help to even the temperature. Instead of Pizza stone, you can use a cast iron pan or cast iron dutch oven.
After 1/2 an hour spread olive oil on the dough and sprinkle sesame seeds or sunflower seeds on top. This is optional.
Remember to score the bread to avoid bursting out the bread. Bake the bread on the pizza stone for 30 to 40 minutes. Check after 30 minutes.Please try the recipe.
