This is a go-to recipe for me when I don’t feel like eating meat I’m going to chop some fresh thyme and vegetables I’m using onions bell peppers celery carrots and of course some huge garlic in a pot I combine my chopped veggies with some olive oil once they’re soft I add some spices
And tomato paste as well as some soaked red peas chopped cabbage and some dried vegetable stock once it boils down I pour it over some of my cooked quinoa and then I enjoy it for either breakfast or lunch
