Ingredients:
#1 Cosy Caramelized Onion and Mushroom Soup
4-5 big onions, cut into rings
1 tbsp olive or veg oil
2 cloves garlic, finely minced
1 tbsp vegan butter
150g mushrooms, cut into pieces (5.3 oz)
1/3 cup + 1 tbsp white wine (100ml)
1 tbsp soy sauce
2 bay leaves
1 tsp dried herbs (thyme, basil, marjoram.. )
salt, pepper to taste
fresh rosemary
1-2 tsp balsamic or white wine or apple cider vinegar
2 tbsp agave
4-6 cups vegetable broth (1- 1 ½ litres)*
*start with 4 cups then gradually more as it’s cooking,
→ serves 4-6
#2 Tofu Spinach Pastry Bites
1 block of firm tofu
generous pinch of salt (or to taste)
Juice of 1 lemon
2 tsp white wine vinegar
1 tbsp vegan butter
2 cloves of garlic, minced
150g frozen spinach, defrosted (5.3oz)
→ or sub with 4-5 handfuls of fresh spinach, let it wilt down for about 3 minutes
200-250g of puff pastry (i used up about 5 of these square sheets)
→ leave the dough in the fridge until just before you start working with it
*makes 15-20 bites
#3 Vegan Gravy
1 celery stalk
1 medium sized carrot
1 big onion
2-3 cloves garlic
150g shiitake mushrooms (5.3oz)
1 tbsp vegetable or olive oil
1 tbsp vegan butter
1 tbsp mustard
1 tbsp balsamic vinegar
1 tbsp agave syrup
1 tbsp soy sauce
fresh rosemary
2 bay leaves
1 ½ tbsp cornstarch or all purpose flour
¼ cup red wine (60ml), sub for veggie broth
2 cups vegetable broth (500ml), more if needed
salt to taste
→ enough for 3-4 servings
→ in the end you can stretch the sauce by adding another ½ cup veggie broth + 2 tsp cornstarch and letting that simmer for another 5 minutes
→ or. use twice the amount of ingredients and a bigger pot to get more sauce volume wise
#4 Crispy Garlic Brussel Sprouts
about 250g brussel sprouts (8 oz)
1 tbsp vegetable oil
1 clove garlic
1 tsp lemon zest
generous pinch of salt
#5 Apple Cinnamon ‘Tiramisu
Apple part:
3-4 apples
1/2 tsp cinnamon
1/2 tsp vanilla
1/3 cup water (80ml)
½ lemon
Cream part:
1 cup cashews, soaked in water overnight night then boiled for ~ 30 min (g)
½ cup soy yogurt, thick (200g)
Juice of 1 lemon
pinch of salt
3 tbsp sugar or agave or other sweetener, or to taste
Also:
16-24 Spekulatius Or lotus cookies, vegan, more if needed
3 Tbsp strong chai tea
Cinnamon for the top
