Ingredients:

2 cups shredded cabbage (green or purple)
1 cup broccoli florets, chopped into bite-sized pieces
1 large carrot, grated or julienned
1 cup sprouts (Chana and Moong)
1 cucumber slices
1-2 Curd
Optional additions: cherry tomatoes, sunflower seeds, etc.

Dressing:

1-2 cup of curd
2 tablespoons lemon juice (or vinegar of your choice)
1 teaspoon honey or maple syrup (optional, for sweetness)
Salt, Chillies and pepper to taste

Instructions:

Prepare the Vegetables:
Shred the cabbage finely. If using purple cabbage, it adds color contrast to the salad.
Chop the broccoli into small florets.
Grate or julienne the carrot.

Blanch the Broccoli and Sprouts:
Bring a pot of water to a boil.
Blanch the broccoli florets and sprouts in boiling water for about 2-3 minutes until bright green. Immediately transfer them to the ice water to stop the cooking process. Drain well before adding to the salad.

Combine Vegetables:
In a large mixing bowl, combine the shredded cabbage, chopped broccoli, grated carrot, cucumber and sprouts. Toss gently to mix evenly.

Prepare the Dressing:
In a small bowl, whisk together the curd, lemon juice (or vinegar), honey or maple syrup (if using), salt, and pepper until well combined.

Assemble the Salad:
Pour the dressing over the salad ingredients in the large bowl.
Toss the salad gently until everything is coated evenly with the dressing.

Serve:
Transfer the salad to a serving dish or individual plates.
Optionally, garnish with additional sprouts or seeds on top for extra texture.
