hey everyone welcome back to my kitchen today I’m going to show you how to whip up a quick and easy pesto pasta salad that’s just perfect for summer this dish is not only delicious but also super simple to make it’s light it’s fresh and it’s packed with flavor trust me this is going to be a hit at your next Gathering or even just as a weekday meal all right let’s get started with what you’ll need gather all your ingredients first to make the process smoother for this recipe you’re going to need 11 oz of whole wheat pasta whole wheat pasta adds a nice nutty flavor and is a bit healthier than regular pasta 13 oz of roasted Peppers drain them and slice them up these add a sweet and Smoky flavor that compliments the pesto beautifully 6 tablespoons of basil pesto which is the heart and soul of this dish you can use store-bought or homemade pesto one mozzarella ball chopped into bite-sized pieces the creamy texture of mozzarella pairs perfectly with the other ingredients and 4 oz of fresh rocket rocket also known as arugula adds a peppery kick that balances the richness of the pesto and cheese and of course don’t forget some salt and pepper to taste these simple seasonings will enhance all the flavors first things first cook your pasta according to the instructions on the packaging make sure to use a large pot of salted water it usually takes about 8 to 10 minutes but keep an eye on it you don’t want to overcook it you want it to be alente not mushy alente means the pasta should be firm to the bite once it’s cooked drain the pasta and rinse it under cold running water until it’s nice and cool this stops the cooking process and keeps the pasta from sticking together now grab a large bowl and toss in your pasta make sure the bowl is big enough to mix all the ingredients comfortably next add those roasted Peppers don’t they look gorgeous they add such a vibrant color to the dish then throw in your chopped mozzarella the creamy goodness of mozzarella is just what we need to make this salad irresistible that creamy goodness is just what we need it melts slightly and blends beautifully with the pesto it’s time for the star of the show 6 tablespoons of basil pesto this is what gives the salad its unique and delicious flavor this stuff is like summer in a jar the aroma of fresh basil is simply intoxicating pour it over your pasta and give everything a good mix make sure all that pasta is coated in that delicious pesto you want every bite to be bursting with flavor finally add in your fresh rocket this is going to add a nice peppery kick to our salad don’t be shy with the rocket it really elevates the dish toss it all together again until it’s well combined you want to make sure every ingredient is evenly distributed now season with some salt and pepper to taste taste as you go to make sure it’s just right give it one last mix and voila your pesto pasta salad is ready to serve it looks amazing and tastes even better if you’re not eating it right away you can pop it into a sealed container and refrigerate it for up to 3 days the flavors will meld together even more perfect for meal prepping or taking to a picnic it’s a versatile dish that fits any occasion so there you have it a quick easy and absolutely delicious pesto pasta salad it’s a crowd-pleaser and so simple to make give it a try and let me know how you like it in the comments below I love hearing your feedback and seeing your creation don’t forget to like subscribe and hit that Bell icon so you never miss a new recipe see yall next time happy cooking
