here’s a simple recipe for Ragi (finger millet) spinach pockets:
Ingredients:
For the dough:
1 cup ragi flour (finger millet flour)
1/2 cup whole wheat flour
Salt to taste
Water, as needed
For the filling:
2 cups spinach, finely chopped
1 onion, finely chopped
1-2 green chilies, finely chopped (adjust to taste)
1 tsp ginger-garlic paste
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp garam masala
Salt to taste
1 tbsp oil
Instructions:
Prepare the dough:
In a mixing bowl, combine the ragi flour, whole wheat flour, and salt.
Gradually add water and knead to form a smooth dough. Cover and set aside.
Make the filling:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add ginger-garlic paste and green chilies. Sauté for another minute.
Add turmeric powder and garam masala. Mix well.
Add chopped spinach and salt. Cook until the spinach wilts and the mixture is dry. Remove from heat and let it cool.
Assemble the pockets:
Divide the dough into small lemon-sized balls.
Roll out each ball into a small circle (like a small chapati).
Place a spoonful of the spinach filling in the center of the circle.
Fold the edges over to cover the filling and pinch to seal (you can crimp the edges with a fork for a decorative touch).
Repeat with the remaining dough and filling.
Cook the pockets:
Heat a tawa or griddle over medium heat.
Place the filled pockets on the tawa and cook on both sides until they turn golden brown, using a little oil if necessary.
Remove from heat and serve hot with chutney or yogurt.
