INGREDIENTS

2/3 cup Greek yogurt
1/3 cup vanilla protein powder
1 tbsp monk fruit or stevia (can sub honey)
1/2-1 lemon meat

Optional:
3 lemon rinds
1/2 tsp zantham gum
Tbsp coconut sugar

DIRECTIONS

•If using rinds, carve out the meat and set aside
•Add yogurt, protein powder, sweetener zantham gum (if using) and meat of 1/2 a lemon and blend until smooth. Add more lemon or sweetener to taste.
•Fill your rinds or ramekins evenly with mixture and let sit in the fridge about 30 minutes.
•Sprinkle sugar and torch for crème brûlée or enjoy as-is!
