Today’s we are going to make a healthy, gluten- free & high protein banana bread. Banana bread is definitely a comfort bake for me. I make it quite often and this time I have packed it with protein to make it more wholesome & nutritious.
High Protein Gluten-Free Banana Bread Recipe
Ingredients:
2 large bananas (mashed)
2 tbsp jaggery (or sweetener of choice)
2 tbsp olive oil
1 tsp vanilla extract
½ tsp salt
1 cup whey protein ( 3 servings )
2 cups oat flour
1½ tsp baking powder
Sliced or chopped almonds (for topping)
👉Preheat your oven to 180°C (350°F).
👉In a large bowl, mash the bananas into a smooth purée. Add jaggery, olive oil, vanilla extract, and salt. Mix until well combined.
👉Stir in the whey protein and oat flour, mixing until fully incorporated.
👉Gently mix in the baking powder until just combined.
👉Pour the batter into a parchment paper-lined loaf pan and sprinkle the top with sliced or chopped almonds.
👉 Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
👉Allow the banana bread to cool completely before slicing. Enjoy it plain or spread with a little butter if desired.
