Cashew rice balls ❤️ Here’s a traditional south indian snack which is known as ‘Ari unda/Andi puttu” and it only needs 4 ingredients. This was one of my favourite childhood treats and something that I waited to enjoy when someone was visiting us from my hometown.

Ingredients:
1 cup of whole cashews
1½ cup of raw thai rice, soaked and dryed
2 cup of grinded coconut or dessicated coconut
1½ cup of grated jaggery

Recipe:
1. Add the cashews to a wok and stir on medium-flame until it turns golden. Remove it from the wok and keep aside to cool.
2. Add the dried rice to the same wok. Continue stirring the rice on medium-flame until it gets golden and puffed up. Keep aside to cool.
3. Add the puffed rice to a blender and blend till it becomes a smooth powder. Repeat the same with the roasted cashews too.
4. Add both the powdered cashews and rice to a bowl with the grinded coconut and grated jaggery. Mix well until it gets combined and shape into small equal sized balls using your hands. Serve warm or chilled. Enjoyy!!
