Ingredients and preparation:
Mix the following ingredients in a bowl. Cover and let stand in a warm place for 30-60 minutes.
20 g psyllium husks coarsely ground (not powder)
10g flax seeds
550 g water
150 g activated sourdough (LINK new video AND description below)
12 g fresh yeast

Mix the following ingredients and add them to the wet mixture. Mix well and let stand covered for 30 minutes. It is best to cover with a damp cloth so that the surface of the dough does NOT dry out.
350 g oat flour (sifted)
80 g tapioca starch (sifted)
80 g potato starch (sifted)
10 g coconut flour (sifted)
15 g salt

Shape the bread as shown in the video and place it in your baking pan.
Cover the baking pan with another mold or lid AND a damp cloth and let it rise at room temperature (20 – 25 ° C) for several hours until the dough has risen significantly. Depending on temperature this might take shorter or longer.
Brush the surface of the dough with water before baking.
Bake in a preheated oven to 230°C / 460°F WITH STEAM for about 40 – 45 minutes WITH LID (see video for appearance of bread at this point.)
Then REMOVE the LID and reduce the temperature to 200°C / 400°F.
Bake until the crust is slightly brown (aprox. 10 – 15 minutes more).

TIP: Bread is fully baked when it sounds hollow when you gently tap it with your finger.
Be sure to let the bread cool completely before cutting.

HOW do I ACTIVATE my sourdough starter?
50 g gluten-free sourdough starter

50 g water
50 g WHOLE GRAIN rice flour
Optional: 1 teaspoon honey / or maple syrup or coconut sugar

Mix all the ingredients in a (not too small!) bowl, cover it and let it stand at room temperature for about 6 hours until you can see bubbles and the sourdough has increased in volume.
