For the Chickpea & Spinach Salad:
1 can (200g) chickpeas
150g cherry tomatoes
100g fresh baby spinach
2 tbsp olive oil

Chickpea & Spinach Salad:
Drain 1 can of chickpeas and put them in a bowl.
Slice 150g of cherry tomatoes and add them to the chickpeas.
In a pan, heat 1 tbsp olive oil, add 100g fresh baby spinach, and cook for 5 minutes. Add to the salad.
Mix everything together, season with salt, and serve.
For the White Bean & Feta Salad:
2 cans (400g) white beans
½ red onion
2 garlic cloves
2 tbsp red vinegar
2 tbsp lemon juice
1/4 tsp Dijon mustard
1/3 cup olive oil
¼ cup (50g) crumbled feta
Chives
Parsley
Salt and black pepper
White Bean & Feta Salad:
Drain and rinse 2 cans of white beans. Place them in a large bowl.
Add ½ finely chopped red onion, 2 minced garlic cloves, and chopped parsley and chives.
In a separate bowl, whisk 2 tbsp red vinegar, 2 tbsp lemon juice, ¼ tsp Dijon mustard, and 1/3 cup olive oil. Add salt and pepper.
Combine the dressing with the salad, add crumbled feta, and mix carefully.
For the Crunchy Mediterranean Tuna Salad:
1 cucumber
1 red onion
2 celery stalks
3-4 radishes
100g Kalamata olives
100g canned tuna
1 tsp mustard
½ lemon
2 tbsp olive oil
3 tortillas (for chips)
Smoked paprika
Salt
Crunchy Mediterranean Tuna Salad:
Chop 1 cucumber, 1 red onion, 2 celery stalks, and 3-4 radishes. Add them to a bowl.
Add 100g Kalamata olives and 100g canned tuna.
Make a dressing with 1 tsp mustard, ½ lemon juice, and 2 tbsp olive oil. Whisk and pour over the salad.
For tortilla chips: Cut 3 tortillas into triangles, brush with olive oil, sprinkle smoked paprika and salt, and bake at 200°C (390°F) for 8-10 minutes.
Serve the salad with crispy tortilla chips.
