One Tray Chicken Fajitas

Ingredients:
• 200g chicken breast, thinly sliced
• 1 bell pepper, sliced
• 1 red onion, sliced
• 1 tbsp jalapeños
• 5 olive oil sprays
• ½ tsp smoked paprika
• ½ tsp ground cumin
• ¼ tsp chili powder
• ¼ tsp garlic powder
• ¼ tsp onion powder
• ¼ tsp salt
• Pinch of black pepper
• 1 avocado, mashed
• 1/4 tsp chilli flakes
• 1/2 lemon, squeezed
• Salt and pepper to taste
• Low carb wraps for serving (or lettuce wraps)

Method:

1. Preheat oven to 200°C (400°F).
2. On a baking tray, add chicken, bell pepper, and onion.
3. Spray with olive oil and sprinkle over all spices, salt, and pepper.
4. Toss everything together and spread evenly.
5. Bake for 20–22 minutes until chicken is cooked through and vegetables are tender.
6. Serve in low carb wraps, lettuce or on a bed of salad to keep it low-carb and light.
