This breakfast/brunch recipe never gets boring!
Japanese yams are so delicious and if you serve it with eggs and bacon you will have a delicious & healthy breakfast.

Ingredients:
Japanese yam – 1 medium size
Bacon – 2 slices
Eggs – 2-4
Salt
Black pepper
Tip:
– Buy smaller or medium sized yams because bigger one will need more cooking time
Instructions:
Wash yam. Pierce both sides, lengthwise, Â with fork.
Microwave for 5 min. Flip. Microwave for 4 min.
*Tip:
– Test if yam is cooked by poking it with a fork or a knife. If fork does not go in smoothly, microwave for 1-2 more minutes.
Fry eggs to your preference.
Microwave or fry bacon.
Split open yam.
Serve with bacon and eggs.
*Tip:
– I make my eggs differently every week. One week is over easy, next week is scrambled, following week I use butter instead of olive oil, etc. This way I never get bored of eggs.
