Ingredients:
-2 Lbs of Chicken Breast (907g)
-1 Onion
-3 Bell Peppers
-1: 10 oz Can Diced Tomatoes with Chilies (283g)
-5 Medium Russet Potatoes (~200g each)
-2 Cups Reduced Fat Mexican Style Cheese (226g)
-2 Packets of Fajita Seasoning

Instructions:
1.) Cook chicken with onion, peppers, seasoning, and tomatoes in crockpot (high 3–4 hrs or low 6–8 hrs).
2.) Bake fork-pierced potatoes at 350°F for ~60 min until tender.
3.) Shred chicken; split potatoes.
4.) Top potatoes with chicken and cheese; bake 2–3 min until melted.
5.) Cool slightly and enjoy.
