⬇️GRILLED PEACH BURRATA SALAD RECIPE🍑🥗⬇️
Craving a quick, fresh, and flavorful summer salad? This grilled peach burrata salad is everything…sweet, creamy, peppery, and perfect for the last few weeks of summer!
I’ve been craving this salad all week!! It took a miracle (read: both kids napping at the same time) to make it happen, and it was everything I hoped it would be.
✨INGREDIENTS✨
– 1 ripe peached, sliced into wedges
– Tomatoes, cut into wedges
– Arugula
– Salt/Pepper
– Olive Oil
– Aged Balsamic Vinegar (I used an 18 year, but Balsamic glaze would also work)
– 1 ball of burrata
🍑HOW TO MAKE IT🍑
1. Pre-heat your grill (I did stove-top and did medium-high heat).
2. In a small bowl, toss together peach wedges, a drizzle of olive oil, salt and pepper. Grill on each side for 3-5 minutes.
3. While peaches are grilling, prep your arugula. I like to pre-dress mine so they are all evenly dressed (no bland arugula in my house!). In a medium-large bowl, toss together arugula with olive oil, balsamic, salt and pepper. Adjust to your taste – always start with a little bit of everything because you can always add more, but you can’t take it out.
4. Grab a serving plate and plate arugula, tomatoes, grilled peaches, and hand-shred burrata.
5. Serve immediately and enjoy 😋
