High-Protein Pesto Pasta 🤤
Prep time – 20 mins

Ingredients:

• Farfalle (pasta) – 200-250 g
• ⁠Edamame – 1 bowl
• ⁠Basil leaves – 1 cup
• ⁠Walnuts (roasted) – 6
• ⁠Olive oil – 2 tbsp
• ⁠Lemon juice – 2 tbsp
• ⁠Garlic cloves – 8-10
• ⁠Salt to taste
• ⁠Cherry tomato – 5-6
• ⁠Butter – 1 tsp
• Parmesan Cheese (garnish)
• ⁠Chilli flakes & oregano to taste

Recipe:

1. Boil farfalle in olive oil and salted water until al dente. Reserve ½ cup pasta water, then drain.
2. ⁠In a blender/processor, add edamame, basil, roasted walnuts, garlic, olive oil, lemon juice, and salt.
3. ⁠Blend into a smooth paste. Add a splash of pasta water if needed for a creamier consistency.
4. ⁠Heat butter in a pan, add chilli flakes, oregano & toss in cherry tomatoes. Sauté for 2–3 minutes until slightly blistered.
5. ⁠Add drained pasta to the pan, spoon in the walnut pesto, and mix well.
6. ⁠Adjust consistency with reserved pasta water. Taste and adjust seasoning.
7. ⁠Serve warm, garnished with extra basil, parmesan cheese & a walnut crumble on top. 🌿
