Ingredients (for 3 quesadillas):
• Boiled rajma – 100 g
• Boiled sweet corn – 50 g
• Onion – 1 medium, chopped
• Paneer – 60 g (for filling) + 70 g (for mayo)
• Hung curd – 50–60 g
• Soaked cashews – 6–7 pieces
• Salt – to taste
• Peri-peri masala – to taste
• Red chili flakes / chaat masala / oregano – optional seasonings
• Mozzarella – 20 g, crushed
• 3 medium rotis
Recipe:
1. In a bowl, combine boiled rajma, corn, chopped onion, and crumbled paneer (60 g). Add salt, peri-peri masala, and your choice of seasonings.
2. In a blender, add 70 g paneer, hung curd (50–60 g), soaked cashews, salt, and pepper. Grind to make a smooth, healthy mayo.
3. Mix the mayo with the rajma-paneer mixture.
4. Spread this mixture on a roti, top with crushed mozzarella, and grill until the cheese melts and the edges are crispy.
5. Serve hot — a super tasty, protein-packed quesadilla ready in minutes!
