Ingredients Apple Beetroot Carrot Salad (ABC Salad)
1 beetroot
1 apple
2 carrots
1 tablespoon chopped cilantro
½ inch piece fresh ginger, peeled
1.5 teaspoons lemon juice
½ teaspoon ground black pepper
Salt to taste
1 teaspoon maple syrup or honey (optional)
1 tablespoon olive oil
Sliced almonds, for topping
Chia seeds, for topping

How to Make Apple Beet Carrot Salad

1. Peel the carrots, apple, and beetroot. Trim the ends of the carrots and beetroot.
2. Cut the apple into quarters and remove the core.
3. Using a box grater or food processor, grate the carrots, apple, and beetroot.
4. Add the grated carrots, apple, and beetroot to a large mixing bowl. Stir in the chopped cilantro.
5. Drizzle in the lemon juice and season with ground black pepper and salt.
6. Add the honey (if using) and olive oil. Grate the ginger directly into the bowl.
7. Toss everything together until the salad is well combined and evenly coated.
8. Transfer to a serving bowl and finish with extra cilantro, chia seeds, and sliced almonds on top.
