Mexican Quinoa 🤤🥘 | One Pot Healthy Lunch or Dinner Recipe ✨

🥘 Recipe :

* Heat some oil in a pan. Add 4–5 chopped garlic cloves and 1 large chopped onion. Sauté well until soft and fragrant.
* Add 1 small red capsicum (cut into cubes) and cook for a minute. Stir in ¼ cup boiled black rajma and ¼ cup boiled corn, mixing everything well.
* Season with salt to taste, pepper, chilli powder, paprika, roasted cumin powder, and oregano. Mix until the spices coat everything evenly.
* Now add 1 cup washed quinoa, followed by 2 cups water and 90 ml tomato purée. Give it a good mix.
* Cover and let it cook on low to medium heat until the quinoa is fully cooked and the water is completely absorbed. Fluff gently and serve warm.
