Creamy Lauki Tomato Soup – no cream, no fuss, just pure flavour!

Ingredients:
1 medium lauki (bottle gourd), peeled & chopped
4 tomatoes (chopped)
1 onion (chopped)
2–3 green chillies (adjust to spice tolerance)
4–5 cashews
Water for boiling
½ tbsp ghee or butter
6–7 garlic cloves, finely chopped
A few coriander stalks finely chopped
2 tbsp malai or coconut milk
Black pepper (as needed)
Salt to taste
Method :
Boil lauki, tomato, onion, green chilli & cashews for 10–15 min. Save the stock, blend everything smooth. In a pan heat ghee/butter, sauté garlic & coriander stalks, add blended soup + stock. Season with salt, pepper & finish with malai/coconut milk.
