INGREDIENTS
Drumstick / Moringa pods – 2 large
Roughly chopped onion – 1 large
Roughly chopped tomato – 1 medium
Green chilli – 1
Garlic cloves – 4
Coriander leaf stems – ½ cup
Turmeric powder – ¼ tsp
Salt to taste
Water as required
Other
Fresh coriander leaves
Hot water as required
METHOD / PREPARATION
Step 1: Cut the drumsticks
Cut the drumsticks in half if they are large. Peel the outer skin with the help of a knife and cut them into the desired size. Wash in clean water and keep aside.
Step 2: Pressure cook
Pressure cook all the ingredients mentioned above. Once it comes to normal temperature, open the cooker lid and transfer the contents to a strainer. Separate the vegetable stock and allow it to cool.
Do not throw away the vegetable stock; use it to make the soup.
Step 3: Grind all pressure-cooked ingredients
Place the cooked drumsticks on a plate. Remove the pulp from the cooked drumsticks and keep it in a bowl. I got around ½ cup of drumstick pulp. Transfer it to a mixer grinder jar along with the remaining cooked vegetables and the required vegetable stock.
If the vegetable stock is not sufficient, you can use warm water. Blend into a fine paste or puree.
Step 4: Cook the soup and serve
Add the puree to a large pan. Add the required hot water to adjust the consistency of the soup. I used 2 cups of hot water. Stir and cook on medium heat for 10 to 12 minutes. Add salt to taste and cook for another 5 minutes, stirring occasionally.
You can add a pinch of black pepper powder for flavour. Once the soup reaches your desired consistency, switch off the heat. Add finely chopped fresh coriander leaves, stir, and serve.
