Protein-Rich Foxtail Millet Upma (Balanced Indian Breakfast)

For Healthy Breakfast Series 3/100, I made a protein-rich foxtail millet upma — simple, nourishing, and perfect for daily eating.
This bowl focuses on slow carbs, plant protein, fibre, and healthy fats, making it ideal for anyone trying to eat clean without feeling deprived.
Recipe – Foxtail Millet Upma – Serves 2
Ingredients:
• ½ cup foxtail millet
• 1 cup mixed sprouts (protein boost)
• ½ cup vegetables (onion & tomato)
• Tadka: mustard seeds, urad dal, cold-pressed oil
• Spices: turmeric, chilli powder, coriander powder, garam masala, salt
• Fresh coriander leaves for garnish
• Healthy fats:
• 2 tbsp coconut chutney
• 4 whole cashew nuts
Method (Short & Simple):
1. Rinse and soak foxtail millet for 20–30 minutes (overnight is ideal)
2. Heat cold-pressed oil, add mustard seeds and urad dal.
3. Add onion, tomato, and sauté until soft.
4. Add sprouts, spices, and soaked millet.
5. Cook with water until fluffy and well combined.
6. Garnish with coriander leaves.
7. Serve with coconut chutney and cashews.
