Recipes –
GREEK CHICKEN BOWLS –
Chicken –
1-2lb of boneless skinless chicken thighs or breasts
Salt + Pepper to taste
1 tsp Garlic Powder
1 tsp Paprika
1 tbsp avocado oil
Preheat oven to 400. Prepare Skillet over medium high heat with avocado oil and season chicken generously. Sear Chicken 2-3 minutes each side (basically until golden brown / it no longer sticks). Finish cooking in 400 degree oven for approx 10 min or until internal temp of 165 degrees. Remove from oven and allow to rest at least 3-5 min before slicing into bite sized pieces.
Grains –
1 cup of quinoa (cooked in 2 cups of bone broth in rice cooker)
1/2 cup of lentils (cooked in 1 cup of bone broth in rice cooker)
These can be prepped hours or even days prior to making bowls.
Greek Yogurt Sauce –
3/4 cup plain greek yogurt (I use non fat)
3/4 cup of feta
1-2 cloves garlic
juice of 1/2 lemon
salt and pepper to taste
combine ingredients in blender and blend until smooth – if consistency is too thick add 1 tbsp of water until desired consistency.
Toppings – (optional / add whatever YOU like!)
Greens/Lettuce, Olives, Tomatoes, Cucumbers, Feta Cheese, Pickled Red onion, hummus
Assemble bowl with grains and protein as your base and top with whatever toppings you like! I finish the bowl off with a drizzle of the yogurt sauce!
BURGER BOWLS –
We grilled burger patties on this night, but feel free to brown 1-2lbs of ground beef!
Burger Sauce (adjust to your taste!!!!)
1/4 cup of Mayo
2 TBSP Ketchup
2 TSP Yellow Mustard
1 TSP White Vinegar
1/4 cup of finely diced dill pickles
1-2 TSP of pickle juice
1 TSP Onion Powder
salt, pepper to taste
Base – Air fryer Sweet potato fries (can absolutely dice your own potatoes, coat in oil, season, and Air fry at 400 for about 12-15 min!)
Other toppings – Lettuce, tomato, pickled red onion, dill pickles, cheddar cheese
Assemble bowl with potatoes as base, followed by meat, cheese, and other fresh toppings. Drizzle with burger sauce and enjoy!
SALMON BOWLS –
6-8oz of salmon (skin removed and cut into bite sized pieces)
Marinade –
1 TBSP honey
1 TBSP Siracha
1 clove minced garlic
3 TBSP Soy Sauce
Squeeze of fresh lime juice
Allow Salmon to marinate in sauce for at least 5 minutes (up to 1 hour)
Air fry at 400 degrees for about 7-8 minutes.
Base – I used 1/2 cup of white rice cooked in 1 cup of pure coconut water in rice cooker. Once cooked I seasoned with salt, pepper, and lime juice as well as added some chopped cilantro.
For fresh ingredients I made a Mango Salsa combining 1 diced avocado, 1 diced mango, 1/4 cup diced red onion, 1/2 of a red bell pepper (diced), cilantro, lime juice, and a splash of coconut water into a bowl.
To assemble bowl I added cilantro lime rice as base, cooked salmon, Mango salsa, and freshly diced cucumber, carrot, and steamed edamame (cooked in microwave). I topped everything with Sriracha Mayo.
GOCHUJANG BEEF BOWLS –
2lbs of cooked ground beef
1 cup of rice cooked in bone broth
Steamed Broccoli (I used frozen)
Gochujang Sauce –
3 TBSP Soy Sauce
1 TBSP Rice Vinegar
1 TSP Sesame Oil
1 TBSP Tomato Paste
2-3 TBSP of Gochujang Chili Sauce (adjust to your spice level)
Cook ground beef in Skillet. Add Gochujang Sauce and allow to combine. Once Ready, create your bowl using cooked rice, beef and top with steamed broccoli and whatever toppings you like! I used kimchi, pickled red onion, freshly sliced cucumber and carrot, bean sprouts, green onion, and cilantro!
