This colorful salad tastes heavenly. It’s sooo refreshing, crunchy, and full of flavor.
Carrot, red cabbage, beet, and walnuts with a zesty lemon dressing.

Ingredients:
Carrots 1-2 (julienne cut or grated)
Cabbage 1/2 cup (very thinly sliced)
Beets 2-3 (julienned or grated)
Cilantro 2-3 tbsp
Walnuts 100 g, coarsely chopped

Dressing:
2 tbsp olive oil
Juice of ½ lemon
1 teaspoon honey
1 tbsp balsamic vinegar
Salt, to taste or 1 tsp

Recipe:
1. Peel carrots and beet and cut into julienne or grate them. Place in a large bowl.
2. Cut red cabbage as thinly and finely as possible and add to the bowl.
3. Chop some cilantro and add to the bowl.
4. Chop walnuts coarsely and add these to the bowl too.
5. In a small bowl, whisk together the dressing ingredients (olive oil, lemon juice, honey, balsamic vinegar and salt).
6. Pour the dressing over the salad and toss well until evenly coated.
7. Let the salad rest for 10-15 minutes before serving so the flavors combine.
8. Enjoy the heavenly flavor.
