🥗 Ingredients
For the Raita:
2 tbsp soaked chia seeds
1 bowl high-protein curd
2 tbsp grated carrot
2 tbsp grated cucumber
1 small boiled beetroot
1 inch ginger
1 green chilli
Black salt to taste
For the Tadka:
1 tsp ghee
1 tsp cumin seeds
1 tsp chilli flakes
½ tsp hing (asafoetida)
5–6 curry leaves
1 tbsp peanuts
For Garnish:
Pomegranate seeds
Fresh coriander leaves
👩‍🍳 Method
Blend boiled beetroot, ginger, and green chilli into a smooth paste.
In a bowl, add high-protein curd.
Mix in soaked chia seeds, beetroot paste, grated carrot, and grated cucumber.
Add black salt and mix well.
Prepare the tempering by heating ghee in a pan. Add cumin seeds, chilli flakes, hing, curry leaves, and peanuts. Let it splutter.
Pour the hot tempering over the raita.
Garnish with pomegranate seeds and coriander leaves.
