3 Bean Artichoke Salad – Mediterranean inspired

This salad is a hitter👌. This has some gut friendly probiotics to feed your gut microbes, heart healthy fats, plant based protein, minerals, and a ton of antioxidants from the herbs & evoo.
Great for stable blood sugar, happy hormones and supports your gut health.
Serves: 6-8
Ingredients:
1 can low sodium cannellini beans
1 can low sodium red kidney beans
1 can low sodium chickpeas
12 oz marinated artichokes, chopped
1/2 large English cucumber
1/2 cup fresh basil, minced
1/2 cup fresh parsley, divided and minced
1 lemon, zested and juiced
Salt and pepper to taste
2 garlic cloves, minced
2 tsp liquid sweetener (honey, agave, etc.)
1/4 cup evoo
Directions:
1. Drain and rinse the cannellini beans, red kidney beans, and chickpeas. Add to a large mixing bowl.
2. Chop the marinated artichokes and add to large mixing bowl.
3. Slice and dice the cucumber into half an inch pieces. Chop and mince the fresh basil and parsley up. Add the cucumber and basil to the large mixing bowl.
4. In a small bowl or container, Add about 2 tablespoons of fresh parsley. Add remaining fresh parsley to a large bowl.
5. Zest And you still lemon into the small bowl with the parsley. Salt and pepper to taste. Mince the garlic cloves and add to the small bowl.
6. Add liquid sweetener and extra virgin olive oil to the small bowl and mix the dressing together then pour onto the bean mixture. Refrigerate and store.
