This is one of those recipes that feels like dessert, but eats more like a proper snack.
Soft, lightly sweet, and packed with apples — the batter almost disappears, which is exactly the point.

Ingredients:
🍎 800 g apples (not peeled)
🥚 3 eggs
🍬 100 g coconut sugar
🥛 120 ml milk (any kind)
🌾 100 g GF 1:1 flour or oat flour
🧁 5 g baking powder
🌼 5 ml vanilla extract
🍂 Cinnamon & nutmeg, to taste
🧂 Pinch of sea salt

How to:
Thinly slice the apples using a mandolin — they really need to be paper-thin, so I highly recommend a mandolin rather than a knife.

In a bowl, whisk together all of the wet ingredients first. Add the coconut sugar and whisk vigorously until well combined and slightly frothy (you can use an electric whisk if you prefer). Add in the dry ingredients and mix until smooth.

Slowly fold in the apple slices, making sure they’re well coated.

Transfer the mixture to a non-stick silicone baking container or line a regular loaf tin with parchment paper.
Bake at 180°C for 45 minutes, until set and lightly golden.

Let cool slightly, slice, and enjoy 🍎
