5-Minute Broccoli Bread
This savory broccoli bread makes the perfect base for a healthy sandwich that’s:
•High in fiber
•High in protein
•Low in carbs
•Balanced with healthy fats
■ Ingredients
•For the broccoli bread:
100 g chopped raw broccoli
50 g almond flour
1 egg
10 g grated parmesan
½ tsp baking powder
1 tsp water
1 tsp olive oil
Salt and black pepper to taste
Mix seeds (pumpkin, sunflower, susan, flax seeds)
•For the sandwich (toppings):
Cream cheese
Tuna
Lettuce
Cherry tomatoes
■ Instructions
1.Start by blending the broccoli on its own until it’s finely processed.
2.Add the egg, parmesan, almond flour, olive oil, water, baking powder, salt, and pepper, and blend again until the mixture is smooth and well combined.
3.Pour the batter into a small greased baking dish and sprinkle the mixed seeds on top.
You can either microwave it on high for about 5 4.minutes, or bake it in a preheated oven at 180°C (350°F) for about 15 minutes, until set.
5.Let it cool completely before slicing it in half. Toasting it is optional, but it really improves both the texture and the flavor.
6.Top with cream cheese, lettuce,, cherry tomatoes, and tuna — or whatever you’re in the mood for, like avocado, grilled vegetables, or smoked salmon.
