Finely chopped cabbage and spring onions are tossed in a creamy green goddess dressing made with basil, parsley, lemon, cashews, and olive oil. Ingredients:
½ head cabbage, very finely chopped
3 spring onions, chopped
Dressing:
1 packed cup fresh basil
Large handful fresh parsley
1 clove garlic
1 shallot
Juice of 2 lemons
⅓ cup cashews, soaked in hot water for 5 minutes
¼ cup olive oil
¼ cup nutritional yeast (or parmesan)
Salt and pepper
Instructions:
Add cabbage and spring onions to a large bowl.
Blend all dressing ingredients until smooth and creamy.
Toss with the cabbage mixture until well coated.
Serve with tortilla chips or enjoy as a fresh, herby salad.
