Breakfast Quinoa with Caramelized Banana

1 cup quinoa
2 cups milk
1/4 tsp cinnamon
1 banana
1 tsp avocado oil or butter

In a medium pot over high heat, combine the quinoa, milk, and the cinnamon. Bring the mixture to a boil, then reduce the heat to medium-low and bring the quinoa to a simmer.

Cook the quinoa for 10 to 15 minutes, or until the milk is absorbed and the quinoa is fluffy.

In a medium skillet over medium heat, add the oil. Add the banana and cook for 2 to 3 minutes per side, or until each side is golden brown and caramelized. Sprinkle extra cinnamon (optional).

To a plate, add 1 cup cooked quinoa top with caramelized banana, add Greek yogurt & nut butter.
