Vegetable Oats Upma

Ingredients
• 1 cup rolled oats
• 1 tbsp oil
• 1 tsp mustard seeds
• ½ tsp urad dal
• ½ tsp cumin seeds
• Few curry leaves
• 1 inch ginger, finely chopped
• 2 green chilies, slit
• ½ onion, finely chopped
• ½ carrot, finely chopped
• 5 beans, finely chopped
• ¼ capsicum, finely chopped
• 2 tbsp green peas
• ½ tsp turmeric
• ¾ tsp salt (adjust to taste)
• 1 cup water
• 2 tbsp coriander, chopped
• 2 tbsp grated coconut
• 1 tbsp lemon juice

Instructions
1. Dry roast oats on low flame until aromatic. Keep aside.
2. Heat oil in a pan. Add mustard seeds, urad dal, cumin & curry leaves. Let them splutter.
3. Add ginger, green chilies & onions. Sauté until soft.
4. Add carrot, beans, capsicum, peas, turmeric & salt.
5. Sprinkle 2 tbsp water, cover & cook for 5 minutes.
6. Add 1 cup water and bring to a boil.
7. Add roasted oats, mix well.
8. Cover and cook on low until oats absorb water.
9. Finish with coriander, coconut & lemon juice. Mix gently.
