Sweet Potato, Kale & Sausage Pizza or Flatbread
–I improvise this recipe and use any crust of your choosing. Here’s a quick rundown of what I do
–Saute onion in oil, add chicken broth and kale to cook down
–add in cranberries to kale mixture
–saute or roast sweet potato with any sausage (I like chicken sausage)
–top a pizza with both mixtures and sprinkle with feta cheese
–bake until crust is crisp. prebake crust so it’s crispy
–drizzle with balsamic reduction

Oatmeal Coconut Chocolate Chip Cookies

–Swap out 1/2 of the all purpose flour with coconut flour
–use unsweetened coconut instead of sweetened coconut
–use semi sweet chocolate chips instead of dark chocolate chips
