FLUFFY PROTEIN PANCAKE RECIPE:
1/2 cup rolled oats
1/2 cup low-fat cottage cheese
2 eggs
2 tablespoons low-fat milk
1/2 cup (scant) whey protein powder
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
Pinch sea salt

INSTRUCTIONS
Preheat your waffle iron to a medium-high heat and lightly coat it with cooking spray.
Add the oats, cottage cheese, eggs, protein powder, baking powder, cinnamon, and salt to a high-speed blender and blend until smooth.

Pour the batter into the preheated waffle iron until it covers the iron. Close, and cook for about 4 minutes or until set and golden brown.

Remove and serve immediately with your favorite toppings! Some of my favorites include Greek yogurt, nut butter, maple syrup, and/or fresh berries.

NOTES
Store in the fridge for up to 5 days or in the freezer for up to 3 months. To reheat, pop the waffles in the toaster or toaster oven straight from the fridge or freezer.

I highly recommend using a whey concentrate protein powder blend for this recipe. This is key to keeping the waffles light and fluffy. Protein isolate powders will not work and will create a flat, soft waffle.
