A classic Filipino bakery favorite! These soft, pillowy rolls are filled with a sweet, buttery breadcrumb filling and topped with a delicious crunchy topping. Perfect for your afternoon merienda (snack time)!
⏰ TOTAL TIME: 4 hours (includes rising time)
👨🍳 PREP TIME: 45 minutes
🔥 BAKE TIME: 20-25 minutes

📝 INGREDIENTS
For the Dough:
3 cups (360g) all-purpose flour
¼ cup (50g) granulated sugar
2¼ teaspoons instant yeast
1 teaspoon salt
¾ cup (170g) warm milk
1 large egg
3 tablespoons (42g) butter, softened
For the Filling:
½ cup (60g) all-purpose flour (toasted)
½ cup (99g) granulated sugar
6 tablespoons (85g) butter, melted
½ cup (57g) breadcrumbs
For the Topping:
2 tablespoons (28g) butter, melted
¼ cup (28g) breadcrumbs
2 tablespoons (25g) granulated sugar
👩🍳 INSTRUCTIONS
Make the Dough:
In a large bowl, combine flour, sugar, yeast, and salt
Add warm milk, egg, and softened butter
Mix until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic
Place in a greased bowl, cover, and let rise for 1-2 hours until doubled
Make the Filling:
Toast the flour in a dry pan over medium heat until golden and fragrant (about 5 minutes)
Mix toasted flour, sugar, melted butter, and breadcrumbs until crumbly
Set aside
Shape the Rolls:
Punch down the dough and roll into a 12×16 inch rectangle
Spread the filling evenly over the dough, leaving a ½-inch border
Roll up tightly from the long side, like a jelly roll
Cut into 12 equal pieces
Place cut-side up in a greased 9×13 inch pan
Cover and let rise for 45-60 minutes until puffy
Bake:
Preheat oven to 350°F (175°C)
Mix topping ingredients and sprinkle over rolls
Bake for 20-25 minutes until golden brown
Cool slightly before serving
