This delicious and easy to make Potato Salad is Vegan and Gluten Free. It is topped with a healthy Mediterranean Style dressing that gives the salad a light and refreshing taste. Perfect dish for a large party, a great addition to your main course or a healthier snack in the afternoon.

Ingredients:
7-10 Medium Potatoes
1 Onion
2 Celery Sticks
1/3 Bunch of Parsley
1 Basil Stem

Dressing:
3 Tbs Extra Virgin Olive Oil
3 Tbs Apple Cider Vinegar
1 & 1/2 Tbs Salt

Preparation:
Boil the potatoes until tender, drain the water and add cold water to cool the potatoes and stop the cooking process. Peel the potatoes and cut them in small pieces. Add the potatoes to a large bowl. Peel and chop the onion and add to the bowl. Chop the parsley and basil and add to the bowl. Add the olive oil, vinegar and salt and mix the salad well. Serve in your favorite dish and enjoy this delicious mediterranean potato salad with your friends and family. The dressing is light and refreshing and the salad is supper easy to make. Prep time is 1 hour. In addition, the salad is vegan and gluten free. Enjoy!!!
