Cheeseburger Pasta Skillet
-1 lb Ground Beef
-1/2 chopped onion
-1 cup washed and chopped mushrooms
-2 cups dry Elbow Noodles
-2 1/2 cups Beef Broth
-Burger Seasoning of your choice (I use Weber Gourmet Burger)
-2 tbsp Ketchup
-1 tbsp Mustard
-2 cups shredded Sharp Cheddar
Directions:
Brown ground beef in large skillet. Drain fat. Add remaining ingredients EXCEPT cheddar cheese. Cover and simmer, stirring often, until noodles are al dente’. Stir in cheddar cheese. Serve with steamed veggies!
Kale Salad
For the Salad:
-5 cups Kale Leaves, stems removed
-1 cup diced apple
-1/2 cup feta cheese
-1/2 cup chopped pecans
-1/2 cup Craisins
-1/2 cup bacon, cooked and chopped
For the Dressing
-1 tbsp minced shallot
-1/3 cup olive oil
-2 tbsp red wine vinegar
-2 tbsp Dijon mustard
-2 tbsp honey
-salt & pepper to taste

**(I added onion powder, baked longer, and covered with foil so cheese didn’t burn!)
Sauteed Fresh Green Beans
**(I added a splash of white wine and 1 tbsp of butter.)
