Do you ever open the fridge and feel like you literally have NOTHING to eat? That’s us – a lot. We find creative ways to incorporate what food we do have to make delicious & healthy lunches on the fly.

This past week has been an extremely hard one for those who live in Middle Tennessee. Putnam County experienced an EF-4 tornado in the early morning hours of Tuesday, March 3rd killing 18 people and leaving many people without their homes. We are amazed by the support of our community and outpouring of love and support that has been shown during this incredibly difficult time.

Check out our recipes below for a quick & healthy lunch!

Chicken Salad:
-1 cup cubed chicken
-3/4 cup prepared or homemade mayonnaise
-1 celery stalk, diced
-1/8 cup red onion, diced
-1/4 cup red grapes, cut in half
-1 tsp salt
-Serve over a bed of greens

Herbed Cauliflower Rice:
-1 bag frozen cauliflower rice
-1 cup frozen broccoli
-1/8 cup diced fresh parsley and/or cilantro
-Sauté the cauliflower rice and broccoli on medium heat with cooking fat of choice
-Sprinkle the fresh herbs on top

Pumpkin Spice Power Bites:
-Almond butter
-Rolled oats
-Dried coconut flakes
-Chia seeds
-1 tbsp pumpkin spice blend (recipe here:

Add as much of each as you like into a food processor. If it is too dry, add more almond butter, if it is too wet, add more rolled oats.
Taste test if you want more of the other ingredients.
Roll into small balls for easy to grab snacks.
