Today’s recipe is a healthy twist to traditional Maharashtrian dish “Masale Bhat” or “Spiced Rice”

We are going to use Brown rice for this recipe. The health benefits of brown rice are largely due to it being a whole grain. The fibre in brown rice helps lower cholesterol, moves waste through the digestive tract, promotes fullness, and may help prevent the formation of blood clots.

Brown rice contains more fibre than refined grains like white rice. Choosing fibre rich whole grains like brown rice may reduce belly fat and help you lose weight.

Choosing brown rice over refined grains can help people with diabetes control their blood sugar and reduce the chances of developing diabetes at all.

Brown rice does not contain gluten and is a safe and healthy choice for those following gluten-free diets. Brown rice is highly nutritious, providing the body with a wide array of vitamins, minerals and antioxidants.

Ingredients:-

1 tbsp – Oil
1 tsp – Caraway seeds
1 – Bay leaf
2 nos. – Clove pods
1 – star anise
1/2 tbsp – Ginger garlic paste
7-8 nos. – Cashews
1/8 cup – Corn kernels
1/4 cup – Peas
1/4 cup – cauliflower
1/4 cup – Capsicum
1/4 cup – Ivy gourd
1 tsp – Red chilli powder
1 tsp – Turmeric
1 tsp – Garam masala
2 tsp – Goda masala
1 tsp – Coriander seed powder
1.5 tsp – Salt
1 cup – washed Brown rice
1.5 cup – Water
1 tsp – Lemon juice

Instructions:-

1. In a pressure cooker, add oil and add caraway seeds, clove pods, bay leaf and star anise. Saute well.
2. Add ginger garlic paste and saute well. Once aromatic smell comes up, add cashews and saute well.
3. Add vegetables like cauliflower, capsicum, green peas, corn kernels and chopped ivy gourd & saute all the vegetables well.
4. Add red chilli powder, turmeric, garam masala, goda masala and salt to this mixture and mix everything well with each other.
5. Add washed brown rice and water.
Add lemon juice for tangy flavor. And cover with its lid and allow it to cook for 4 whistles.
6. Allow it to cool and then remove the lid. Brown rice masale bhat is ready in pressure cooker.
