This is one of my several barley soup recipes. We always enjoy it during the winter, and rainy days. It’s full of vitamins that our bodies need to boost our immune system, to stay healthy and well during the cold winter months. I always have V8 vegetable juice from Costco (bulk buy) on hand …I love to use it in my soups, and in my other recipes. ( I will share other recipes soon).

Vegetable-Barley Soup (Serves: 2)
Ingredients:
– ¼ Cup Potatoes, Cubed (2 Small Potatoes Or 1 Medium Sized)
– 2 Cans (11.5 Fl Oz) V8 Vegetable Juice
– ½ Tbsp Olive Oil
– 3 Tbsp Onion, Finely Chopped
– 3 Tbsp Carrots, Cubed
– 2 Tbsp Frozen Peas
– 1 Tbsp Celery, Diced
– 1½ Tbsp Pearled Barley
– 2 Cloves Garlic, Minced
– 1-2 Bay Leaf
– Salt & Fresh Black Pepper
– ½ Tsp Mesquite Seasoning

– Pinch Of Paprika, optional
– Fresh Parsley
