Let rise. Divide the dough into buns weighing 30 grams. Put on a baking sheet with parchment paper and let rise. Grease with the yolk. Bake for 12 minutes at 180°C / 350°F. Make a tuna filling and fill the buns.

INGREDIENTS • 400g /2.5 cups semolina • 250g /1.5 cups flour • 350ml /12oz hot water • 1 tsp yeast • 1 tsp sugar • 1 tbsp butter • 1 tsp salt • 60g/1/3 cup cream cheese METHOD Pour semolina with hot water and mix. Add all ingredients and knead the dough. Let rise. Divide the dough into 9 focaccia. Put on a baking sheet with parchment paper and sprinkle with semolina. Let rise. On each focaccia make incisions. Bake for 20 minutes at 180 ° C / 350 ° F.

3) Italian small focaccia: the perfect alternative to bread!
These soft and delicious bite-size buns are perfect for sliders and smallburgers. They also make fantastic appetizer sandwiches!
INGREDIENTS • 3 tbs Olive oil • 500g Flour • 200ml Water • Sugar • 100ml Milk • 10g Yeast • Salt • Lettuce • Serrano ham • Mozzarella • Tomato METHOD Mix the yeast with sugar. Pour into a larger bowl and add water, milk, olive oil and mix. Add flour and salt and mix again. Use your hands to finish kneading and form a ball. Grease another bowl with olive oil and place the ball inside. Cover with plastic wrap and bake for 3 hours at 28ºC (82ºF) or leave it somewhere warm. Once the ball has double its size divide it into 8. Knead each part to form a small ball. Cover with a towel and let stand 20 minutes. Extend each ball with a roller to form discs. Place the discs on a baking sheet and grease each disc with olive oil and cover each disc well with plastic wrap, place the tray in the hot oven until they have risen in size. Grease a finger and press into the dough several times to form small holes, add salt and bake for 15 minutes at 200ºC (392ºF). Grease each bread with olive oil again.
