Hello Everybody. Today our recipe is Cabbage salad. This is my recipe that i thought of one night when we had in the fridge very few ingredients and was really late to go out and buy anything.We said with my wife to have some salad with a dressing.

We had a look in the web for cabbage salad recipe with no success. So we thought lets improvise.The only ingredients that we had were cabbage, parmesan, Greek yoghurt low fat 2%, olive oil extra virgin, lemon, mustard, soy sauce, and various condiments.

So I thought let’s make it the way we always make the cabbage salad which is: cut it the way you like it and massage it with same salt to soften it. You can add at that point lemon or a little vinegar if you prefer it.

Then we made the dressing which was made with Greek yoghurt low fat 2%, olive oil extra virgin, mustard, soy sauce, smoked paprika, dried garlic granules, dill and parmesan. We mixed everything in a bowl and we added it to the salad bowl.

We mixed all the ingredients well and added extra olive oil and smoked pork loin.

The recipe for the cabbage salad dressing is:
Cabbage 350 grams to be mixed with 1/3 spoon of salt and the juice of ½ lemon

5 table spoons Extra Virgin Olive Oil – cold pressed is even better (I use my own production)

4 table spoons heaped Greek yoghurt 2% fat

3 table spoons heaped Parmesan cheese 18 months matured Reggiano is the best

2 tea spoons mustard3 tea spoons soy sauce Kikkoman is the best
1/6 of a tea spoon smoked paprika

1/10 of a tea spoon dried garlic granules

1/2 of a tea spoon dill
5-6 slices of smoked pork loin

So this is how to make cabbage salad. Try this recipe at home and you will really enjoy it. It is a delicious and healthy salad. You can accompany it with Toasted Bread, Crostini or Greek Paximadi.
