Plain & Healthy Pumpkin Bread

I N G R E D I E N T S -1 3/4 cups All Purpose Flour
-1/2 Coconut Sugar (or brown sugar)
-1 tsp Baking Soda
-1/4 tsp Salt
-2 Eggs
-1/2 cup Agave Syrup (or maple syrup)
-1 cup Pumpkin Puree
-1/2 cup Almond Millk
-1/4 cup melted Coconut Oil

P R E P A R A T I ON 
—Preheat oven to 350F and grease a 9×5 pan with cooking spray or butter.-In a large bowl, whisk together eggs, syrup, and coconut sugar. Add in pumpkin puree, almond milk, and coconut oil, and mix together.
—In a separate bowl, whisk together dry ingredients.
—Add dry ingredients to wet ingredients and mix well to combine. Add in optional mix ins: nuts, chocolate chips, etc.
—Pour batter into greased pan.
—Bake in the oven for 50-60 minutes, until toothpick comes out clean.
—Cool in the pan for 10 minutes, take out the bread, and cool for another 10 minutes on a rack or a baking sheet.

Optional glaze:
-1 tbsp Honey (or maple syrup)
-1 tbsp melted Butter
-1 tbsp Almond Milk (or any milk)
-1 tbsp Powdered Sugar (optional)
—Mix together in a bowl and drizzle over pumpkin bread when cooled.
