Today I bring you my recipe for my super easy, quick and healthy kebabs which are a favourite in my household. They are amazing in burger buns, pitta breads, salads or just as they are with my creamy dipping sauce. I grill mine to make them healthier but you can fry them lightly if you prefer. I leave out the chilli in the mixture so it’s child friendly, and instead I add chilli to the dipping sauce but you can add it in to the mix if you prefer. I hope you try them! The recipe is below. Makes 12-15 kebabs. You will need:
700g chicken mince
1 onion, finely chopped
1 tomato, finely chopped and deseeded
1 handful coriander, finely chopped
1 chilli, finely chopped (optional – if serving to kids leave this out)
Salt and pepper to taste
2 tspn onion powder
2 tspn garlic powder
2 tspn cumin powder
2 tspn coriander powder
1 whole egg
2-3 tbspn breadcrumbs
For the creamy dipping sauce:
1 cup greek yoghurt
1 cup mayonnaise
1 chilli, finely chopped
2 tbsp coriander, finely chopped
Spritz of lemon juice
Salt and pepper, to taste
Milk, to loosen
1. Mix all kebab ingredients thoroughly together.
2. Fry/microwave a tiny bit to check seasoning and adjust to your taste.
3. Shape in to patties and fry/grill each kebab for 10 mins per side till golden brown and fully cooked through (the thicker you make the patties, the longer they will take to cook).
4. Combine all ingredients for the dipping sauce.
4. Once the kebabs are cooked, serve hot with my creamy dipping sauce alongside salad, inside pitta bread or inside brioche burger buns.
