FREEZER MEAL PREP | EASY DINNER IDEAS + KIDS SNACKS

With all this craziness, I wanted to prep a bunch of freezer dinners with ingredients I was able to get at the grocery store. Family style meal prep is SO beneficial especially during times like this when we are thrown into change and transition. Knowing we have dinners already made gives us peace of mind and ONE less thing to worry about!
For this week, I prepped two batches of chicken noodle soup, two batches of sauce with meatballs and sausage, two chicken casseroles, and taco meat. I also prepped some kids snacks because while they’re home they eat ALLLL the things!
Batch cooking or cooking once and eating twice will really help food go far during this time! I am not one who has a ton of meat stock in my freezer at all times so I am working with two packs of chicken and a rotisserie for my family of 5 for two weeks. By doubling veggies and carbs and halving the protein we can make these meals stretch! I also cook double and freeze half.

1/2 cup Italian style bread crumbs
1 egg
1/4 cup parm cheese
1-2 tbsp garlic
1 medium yellow grated
Drizzle of olive oil
Seasonings to taste: garlic powder, onion powder, parsley, pepper, salt, red pepper flakes, Italian seasoning
