GRANOLA BARS:
3 cups old fashioned oats
2 tablespoons coconut oil
1 tablespoons brown sugar (not necessary)
2 tablespoons maple syrup
1/4 cup honey
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups add-ins (such as dried fruit, nuts, sunflower seeds, chia seeds, pepitas, coconut, chocolate chips… anything you’d like!)

1. Preheat oven to 350°F and scatter oats on large pan. Toast for about 15 minutes, stirring once. When they are done, they will look and smell toasty.
2. Line a 9 x 9 pan with parchment paper, wax paper or aluminum foil.
3. Melt coconut oil over medium heat. Add brown sugar (if using), maple syrup, honey, cinnamon, and nutmeg. Bring to a boil so sugar dissolves. Remove from heat and add vanilla. Set aside to cool.
4. Mix toasted oats and add-ins in a large bowl. Add cooled liquid and press firmly into prepared 9 x 9 pan.
5. Let bars set up for at least 1 hour. This goes faster in the freezer.
6. Turn bars out on cutting board and cut into desired size. Wrap individually in plastic wrap.
