Healthy Cream of Broccoli Soup

Ingredients

3 Cup chopped broccoli
1 Cup grated carrot
1/4 Cup coconut milk
2 tbsp all purpose flour
1 Tbsp avocado oil
1 Tbsp minced Garlic
1 Cup almond milk
2 Cup vegetable stock
Salt and Pepper

Directions

1. Heat oil on a low heat in a medium pan
2. Add garlic and sauté for a few seconds or until aromatic. Then add the flour and cook for about 2 minutes. Continuously stir it to avoid browning.
3. Slowly add almond milk, vegetable stock, and coconut milk with continuous stirring. Bring the mixture to a boil.
4. Now add broccoli, grated carrot, and salt and pepper. Cook the mixture for about 15-20 minutes.
5. Turn off heat and serve warm to enjoy!
