This easy to make bread is filled with good-for-you zucchini that’s undetectable. It’s an awesome way to get these special greens into your family’s diet. Fiber, whole grains and greens makes this powerhouse snack a delicious pick-me-up at any time of the day.

For Full Recipe:

Ingredients (Makes 2 round breads)
4 eggs
1 cup sugar (or replace with 1 cup applesauce)
1 cup vegetable or canola oil
2 medium ripe bananas, mashed (~1 cup)
3 cups whole wheat flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 cup shredded unpeeled zucchini
1 cup mini-carobs or mini-chocolate chips

Prep:
In a bowl, beat eggs with a fork. In a mixer, blend in sugar and oil. Add bananas and mix well. Combine the flour, baking powder, baking soda and cinnamon – stir into egg mixture. Stir in zucchini just until combined.
Pour into two greased round pans. Bake at 350° for 50 minutes. Check with a toothpick to make sure it comes out clean. Cool for 10 minutes and then remove from pans to wire racks to cool completely.
We slice ours like a pizza pie. Freeze a bread and serve the other one. Freezes great!
