I love this cloud bread! It makes the perfect sandwich bread and is probably the most pillowy bread I have ever had (while still being perfectly chewy at the same time).

Cloud Bread
Preparation time: 10 minutes
Cooking time: 25 minutes
Yields: 6 buns
Ingredients:
3 eggs, separated
¼ tsp apple cider vinegar
¼ tsp baking powder
2 oz ricotta cheese
pinch of salt
Directions:
Preheat oven to 350 ºF. Line a baking sheet with parchment paper. Set aside.
Place the egg whites, pinch of salt and apple cider vinegar in a large bowl. Using electric beaters, whisk the egg whites to stiff peaks. (You should be able to carefully turn the bowl upside down without it falling out.) Set aside.
Place the egg yolks, ricotta cheese and baking powder in another bowl and mix to combine.
Gently fold the egg whites into the yolk mixture, working in batches.
Carefully dollop the mixture onto the prepared baking sheet.
Bake in the middle of the oven for 20-25 minutes or until golden brown.
Remove from the oven, cool slightly and use to make your favorite sandwich.
