Hi everyone! I’m back with another What I Eat in a Day – this time it’s the self-quarantine edition. Since my family and I are self-isolating in order to help slow the spread of Covid-19, I now have more time to cook. I’m focusing on plant-based meals but also intermittent fasting and trying to limit how much I snack.
